This set pairs two of the most popular kitchen knives together, the 18cm Santoku Knife & the 13cm Shotoh Utility Knife. For the chef or home cook enthusiast with a passion for food & perfection, the blades on these instruments feature 48 layers of steel which create each knife’s unique Damascus-design. The symmetrical cutting edge is Honbazuke honed. This three-stage grinding, sharpening & polishing process gives these knives razor-like sharpness. The entire length of the edge can be used to cut as there is no finger guard. The join between handle & bolster is completely smooth, which helps to prevent calluses forming on the thumb & forefinger & gives a comfortable grip. Hand wash only for best care & avoid cutting on glass, ceramic or stone boards as these will prematurely dull the edge. Maintain & sharpen using whetstones. Miyabi 5000FCD blades are formed by 48 layers of steel with a Rockwell hardness of approximately 61. The black Pakka Wood handle is wonderfully balanced & features a steel end cap with decorative pin & ring.
