This 25cm IO Shen Bread Knife has a scalloped edge with curved bays that allows you to slice your bread & pastries, not tear them! With scallops designed 6mm apart on the blade, this knife fits perfectly between a bread & pastry knife & as such is the perfect companion for any budding baker. Using Triplex Steel Technology, I.O. Shen knives have a layer of extremely hard Japanese steel (Rockwell 62°) sandwiched between two layers of softer stainless steel (Rockwell 10°) to produce the ultimate cutting edge. The softer layers add a protective shock absorbing element to the blade whilst the harder steel which runs through the middle is exposed at the edge of the blade to ensure that your knife is the sharpest blade that can possibly be manufactured.
