The Global Yanagi Sashimi Knife has a long & very thin blade especially designed to prepare sashimi, sushi, sliced raw fish & seafood. The blade is purposely angled from one side & flat on the other. This allows sharper & more precision cutting & slicing from one side of the blade. Global knives are made in Japan from the finest stainless steel material. The blades utilize CROMOVA 18 stainless steel, Ice tempered & hardened to Rockwell C56-58 which holds a razor sharp edge longer than any other steel & resists rust, stains & corrosion.
